Lilly Resort Collection

I normally would wait a few days to post about the Lilly Resort Collection that just came out, except whoops I'm already obsessed with their new prints!  They are fun, colorful, and are making me hope spring (and warm weather) would return!

Recipe: Ten Minute Quesadillas / Soft Taco

As a college student, something I believe everyone struggles with food related is the tough decision between health, money and convenience.  I eat quick lunches and dinners most of the time, and don't want to sacrifice time to make something elaborate.  Combining this with living in a city (and directly across the street from Chipotle, Panera and down the street from two burger places...) leads to me wanting to spend more money eating out, rather than cooking healthier options for myself.   Well I've started to learn a couple quick and easy (and significantly healthier) options than the fast food chains near my apartment!  And here is one: The Ten Minute Microwave Quesadilla

Ingredients:
Tortillas
Mexican Blend Cheese
And any additional food for stuffing (i.e. beans, tomatoes, bell peppers, sour cream, guacamole ect.)
The ingredients I used today: Corn Tortillas, Lite Mexican Blend Cheese, Grape Tomatoes and not pictured: Melange Trois (Bell Pepper Mix) and Guacamole 

I purchased all my ingredients at Trader Joe's, but these items can be found at any local supermarket.

Directions

First prepare your filling items, cutting up any vegetables ect.  (Making the size of the veggies smaller helps reduce the amount of cheese you'll need in the end!).  Make sure that all the items you want to fill inside your quesadilla can be microwaved (I recommend not microwaving sour cream or guacamole).  Those items will go in at the very end!



Then cover the filling food with a layer of cheese

Leave open face and stick in the microwave for 15 second increments until the cheese is melted


Remove from microwave and add any last minute additions that shouldn't be microwaves (like Guacamole or Sour Cream).

Finally fold over your tortilla and enjoy!

Bonus Tip: To help keep your guacamole fresh longer add a bit of lemon juice!  Additionally if you buy the guacamole that comes in packages or bags make the opening on these as small as possible.  While it will take a bit of time and effort to remove the guacamole from, it preserves the rest of the package much longer (so you don't waste as much food!).

OOTD: New Fall Dress

I recently decided to purchase a new dress that I had been eying from the online shop Red Dress Boutique.  This dress is Everly brand, and I love the fun pattern!  We had a "warm" fall day in Boston so I decided to put on this dress with Riding boots and a vest!  The vest is from Banana Republic last year and the boots are Sam Edelman "penny" boots.



Sad that this may be one of the last nice fall days in Boston for a while, but I'm glad I was able to style this dress before winter!

Fall Favorites

1. (Sorry I'm basic) Pumpkin Spice everything! (and I actually mean everything!)

So a couple of weeks ago when I went on a grocery trip to Trader Joes I noticed that they have everything pumpkin I could ever want.  Pumpkin cookies, pumpkin granola bars, actual granola, pumpkin butter, pumpkin chai latte mix, pumpkin tea, pumpkin beer, pumpkin break mix (I could go on forever).  Needless to say I bought one of everything (just to see if I liked it), and all I can say is YUM!

I've always been a fan of pumpkin flavor, so fall is one of my favorite times of the year because everything pumpkin comes out.


2. Cozy Sweaters.  A fall staple in my wardrobe.  I wear these all the time once the weather starts to drop.

3. Riding Boots.  I always get so excited to pull out my ridding boots every fall!  Growing up in California I honestly never had boots until I moved east, but I love wearing them!  They have no doubt become a fall staple in my closet!

4. Puffer Vests.  I love wearing vests with sweaters during the fall because it is effortless, yet still looks cute!

5. Those J.Crew skirts that used to be called the "citi mini" but now I'm not quite sure what their name is!  I actually have this skirt in roughly 7 colors (I know excessive...) but I'm literally obsessed!  It is one of my favorite pieces because it is so easy to style!  It goes with every thing from Button-Ups to Sweaters, to T-Shirts!  It also is a great way to make a basic "class" outfit look instantly nicer, while still being comfortable

Review: Zella Leggings

If you love wearing comfortable leggings in your daily life (as I do) then you should definitely try Zellas!  They are thick, comfortable, and very similar to Lululemon quality (but the best part is they are roughly 1/3 of the the price!!) Perfect for wearing to go workout or perfect for those lazy days when you don't want to wear jeans!   Zellas also come in many fun colors!  I get mine at Nordstorms (and they typically go on sale during the many sales Nordstroms have!)  I literally have about 4-5 pairs in my closet!

Life Hack: How to get make-up and deodorant stains out of clothing

Happy Sunday everyone!  This semester one of my roommates started working at a small boutique nearby on Newbury Street in Boston.  Doing so she has learned a couple of life hacks about getting makeup out of clothing (which has come in handy for me many times this semester!).  Its super easy too.  All you need to do is rub a cotton garment (either T-Shirt, leggings, underwear ect.) on the area that has the make-up or deodorant stain and voila the stain is gone!  Simple and easy!

September Recap

So first off I have been so incredibly busy the past two weeks!  Time has just flown by and I can not believe that it is already October (and that I have midterms coming in the next few weeks...YIKES!).  So since my life has been quite hectic I decided to do a September recap to discuss what I have been up to this past month (for any of you who are interested).

1. Finished my model UN conference!

This past year I have been on the Secretariat (basically a programming board) for my universities collegiate Model UN conference.  The conference was held last weekend, and I am very pleased to announce that everything went beyond perfect!  Delegates had a great time, committees ran smoothly, and everything turned out great!  It was so worth it to be part of this amazing conference and while I have much more free time I am sad that it is over!

2. Started my experience on my university's Panhellenic Council

Another great leadership role I have taken on this semester is being on the Panhellenic Executive Board (which is the governing body for Sorority life).  So far the experience has been amazing.  I have learned more about leadership, professionalism, and myself than I thought possible within the past month!

GO GREEK!!!!! 


3. Begun the dreaded...Job Search

Seeing as I am graduating in a little over 200 days I have begun looking for potential job opportunities.  This is possibly the most daunting task I have thus taken on in my life.  Perfecting resumes, cover letters, and searching for opportunities has been scary to say the least.  I'll be working on this for the greater part of this school year, but hopefully all the work will pay off in the end (with a job ideally!).

4. Trying to enjoy my senior year!

With all the hard work I've been doing I have had to save some time for fun stuff!  It's my last year of college after all, so I've been trying to make time for friends and fun, while still staying on top of all my work.
